Food Industry Frames Debate Around Taste, Cost of Switching Cooking Oils

CHICAGO (AdAge.com) -- A proposal by New York to ban trans-fats could prove a huge headache for the restaurant industry nationwide, forcing it to change recipes in markets beyond the city to insure a consistent product. But it could also be costly -- in more ways than one -- if consumers bypass the trans-fat-free foods because of taste.
